Breakfast is usually a rushed time for my family. My boys are now in college, but I would frequently make ahead items such as breakfast burritos or sausage and biscuits. I didn’t like buying the frozen varieties since they usually had preservatives and were not as healthy.
Here’s a different type of take it with you breakfast. You could freeze some ahead depending on the ingredients you use. I usually see tortillas used for breakfast entrees, but using a pita made for a nice surprise! Pitas have great pockets so the food is not messy which is great for both kids and adults.

Toufayan pitas have high amounts of protein which is good for my daughter, who is now vegetarian. Plus most have lots of fiber which is so needed in today’s foods.
I love that the ingredients are whole food ingredients and not preservatives. The ingredients for the Organic Sprouted Whole Wheat Pita I used are: organic whole wheat flour, organic sprouted whole wheat flour, organic yeast, organic fermented wheat flour, organic vinegar, salt, and organic honey.
I’ve used Toufayan pitas for years and can usually find them in most stores. I’ve used them when my kids were tired of bread sandwiches in their lunchboxes, used them for pizza crusts and many other things. In some stores, they are located in the meat/cheese deli section where you get sliced meats and cheeses instead of in the bread section.
My son and daughter have type 1 diabetes so sometimes we opt for lower carb options. Toufayan’s low carb pita is wonderful. It’s lighter than the original, and my daughter likes the higher protein amount. They have only 13 grams of total carbs per pita. Many kids tend to be more sensitive to carbs in the mornings, so these low carb pitas are a great option.
Here’s how I made the easy Breakfast Pita:
I scrambled 2 eggs per pita.
For this particular morning, I used the Toufayan Bakeries Organic Sprouted Whole Wheat Pitas. I cut the pita in half and then gently opened it and stuffed it with the ingredients.
If I wanted to freeze these, I would probably saute the vegetables and then add the eggs to scramble, and load straight into the pita and freeze.

- 1 Toufayan Pita
- 2 eggs
- 1 Tbsp milk
- Handful of spinach leaves
- ¼ cup chopped tomatoes
- 1 Tbsp shredded cheddar cheese
- Scramble eggs with milk.
- Cut pita bread in half.
- Gently open the pita.
- Layer scrambled eggs with other ingredients into pita bread.
