Quick and Easy Vegetarian Southwest Lunch Pita

This Southwestern Pita  is great for my daughter who is following a vegetarian diet.  She is getting tired of peanut butter and jelly sandwiches.  She takes a southwest style salad most days, but those get old too. So here’s what I came up with for a “lunchable” style lunch with a pita.

Using a Toufayan pita, I was able to easily make a DIY Lunchable which was healthy. Sara loved the option of including different toppings. You could add onions  or substitute some veggie toppings or anything, the sky is the limit!

Toufayan Bakery makes such a great variety of flavors that you can mix up what you make and make so many options. I loved some of the flavored pitas like sweet onion and garlic.

Toufayan Bakery is an American family owned business which is great. They use top quality, wholesome ingredients and their products are trans fat free, which is something I always check labels for.

Toufayan pitas have high amounts of protein which is good for my daughter, who is now mostly vegetarian. Most of the flavors of Toufayan pitas have lots of fiber which is so needed in today’s foods. I love that the ingredients are whole food ingredients and not preservatives.  The low carb pita has 16 grams of total carbs, 7 grams of fiber, and 8 grams of protein for each pita.

We used the Toufayan Bakery Sweet Onion Pita for this recipe, but you could use any of their flavors. The Sweet Onion  flavor was a great flavor  for this Southwest Pita.

I’ve used Toufayan pitas for years and can usually find them in most stores. I’ve used them when my kids were tired of bread sandwiches in their lunchboxes, used them for pizza crusts and many other things. In some stores, they are located in the meat/cheese deli section where you get sliced meats and cheeses instead of in the bread section.

This Southwest Pita really doesn’t even need a formal recipe. I cut the pitas in half, found some jewelry baggies which are perfect for a sauce/salsa and filled the small bag. I added some cheese, corn, beans, tomatoes, and lettuce. I add some yogurt or fruit to round it out for an easy lunch!

  • 1 Toufayan Pita
  • 1-2 Tbsp. Salsa
  • 1-2 Tbsp each of:
  • Canned beans, rinsed
  • Tomatoes
  • Lettuce
  • Shredded Cheddar Cheese
  • Corn kernels
  • Optional: onions
  1. Cut pitas in half.
  2. Put rest of ingredients into separate containers.
  3. Assemble when ready to eat.
