Food Friday: What the CDE Cooks

This week’s meal is one that was made without planning! We all have those days! Actually, I sort of planned because I did throw the chicken in the crockpot before I left for the morning. I love this recipe I found on Pinterest for Crock Pot Ranch Chicken. It’s so easy! But when I came home, after my daughter had tumbling, and it was 8:00 PM, and we still had not eaten, I needed some quick sides.

When I asked Sara, she said chicken flavored rice. I try to not to fix too many things out a package, or processed foods. But in a hurry, sometimes it happens. I tell myself that’s better than eating out and especially fast food. So I made some chicken rice from a box. I try to make a vegetable so I grabbed a bag of frozen spinach from the fridge and put in the microwave for 5 minutes. (I put it in a glass container with a top on it). After the 5 minutes, I added about an 1-2 ounces of Velveeta queso cheese and microwaved another 3 minutes. Then I stirred it up and by that time the rice was ready for a quick meal.

Carb counting: The chicken was zero carbs, the spinach on the package said 3 grams for 1/2 cup, but we usually don’t bother counting the spinach because it is so little. The rice is 15 grams for 1/3 cup and Sara ate about 1/2 cup so 22 grams. She drank a cup of milk with it for an extra 12 grams.
