Jalopena Chicken Casserole

We love casseroles at my house! Especially the creamy ones with cheese! Not that they are the most healthiest but we don’t eat them too often. I do try to substitue lower fat items. Every so often I just crave the creamy stuff!

I’ve also discovered that most casseroles can be frozen if you make double or freeze half of the mixture if you have a smaller family. Makes an easy and quick meal to be able to pull something out of the freezer and pop in the oven!

This is a favorite new casserole that we got from a friend. It’s Jalopena Chicken Casserole. Super easy, delicious and quick! I cooked a large package of chicken breasts in my InstaPot and froze the chicken into chopped chicken baggies of 2 cups each. This makes it super easy to make a quick casserole!

Jalopena Chicken Casserole

1 pkg frozen spinach, thawed

2 Tbsp olive oil

1/2 onion, chopped

2 green onions, chopped

2 jalopenas, chopped

8 oz sour cream

1 can cream of chicken soup

2 Tbsp cumin

12 oz Doritos Nacho Cheese flavor

6 cups cooked chicken

8 oz mexican cheese blend

Saute onions and jalopenas in olive oil. Remove from heat and stir in spinach, soup, sour cream, and cumin.

Layer 1/2 of Doritos, chicken and spinach mixture, and cheese in greased 9 x 13 baking pan. Repeat layer.

Bake at 350 degrees for 20 minutes.
