Quick and Easy Healthy Shrimp Alfredo Herb Fettucine Sauce with Clean Eating Ingredients

This is one of my family’s favorite recipes that I have been making from years. I like using homemade alfredo sauce instead of the packaged and jarred varieties, mainly because I don’t add salt and mine doesn’t have preservatives and is made from fresh ingredients. I have adjusted the recipe over the years to make it healthier.

What I substituted to make alfredo healthier and it still tastes great:

  • whipping cream. I have used skim and 2% milk for years in it and my family still loves. it.
  • Fetzer Sundial chardonnay: I have used white cooking wine and any white wine I happen to have
  • Fresh herbs: I’ve substitued dried chives, parsley, and basil and used about 1 Tablespoon of each.
  • Freshly shredded parmesan cheese: I’ve used the green top grated parmesan as well as mozarella before. Since the recipe has this much cheese, I don’t add salt when cooking since cheese is high in sodium.
  • Fettucini noodles: I use whatever noodles we have and have used rice before also which makes a great dish.
  • If you want the recipe to be gluten free, use gluten free cheeses (check any pre-shredded cheeses for flour which is used to keep the cheese shreds separated), and use gluten free noodles.
  • Depending on how much shrimp you want, you can reduce the shrimp. I usually use 1- 1 1/2 pounds.

  • 2 pounds of shrimp
  • 1 Tbsp olive oil
  • 1 tsp cajun spice
  • ¼ cup butter
  • ½ cup Chardonnay
  • 3 garlic cloves, minced
  • 2 cups milk
  • 2 Tablespoons corn starch
  • 1 cup shredded parmesan cheese
  • ¼ cup chopped fresh basil
  • ¼ cup chopped fressh parsley
  • ¼ cup chopped fresh chives (or green onions)
  • 8 ounces fettucini or noodle of choice, cooked
  1. Heat olive oil in a medium pan over medium heat.
  2. Add shrimp and sprinkle with cajun seasoning.
  3. Saute about 3-4 minutes until pink.
  4. Remove shrimp from pan with a slotted spoon onto a separate dish, leaving drippings in pan.
  5. Add butter to pan and melt over low to medium heat.
  6. Add garlic and saute 1 minute.
  7. Add wine and cook 4 minutes or until mixxture is reduced by half.
  8. Meanwhile, mix milk and cornstarch. Whisk til no lumps.
  9. Stir in slowly, constantly stirring and whisking in pan.
  10. Cook while occasionally stirring for 4-5 minutes or until thickened.
  11. Add shrimp, herbs, and cheese.
  12. Cook, stirring occasionally, until cheese melts.
  13. Serve over fettucini.
